1 (8-ounce) package cream cheese, at room temperature
1 (14-ounce) can sweetened condensed milk
1/2 cup fresh lemon juice
1 T. lemon zest
1 t. vanilla
1 prepared graham cracker crust (Mix 1 c. graham cracker crumbs with 1/4 c. melted butter. Pat into 9 or 10 inch pie pan. Bake at 350 degrees for 5-10 minutes).

Combine the cream cheese, milk, lemon juice, lemon zest, and vanilla in a large bowl. Mix on medium speed until smooth. Pour into the pie crust. Refrigerate overnight.

I love this recipe (courtesy of Emeril Lagasse) because it is SO easy and I LOVE lemony things! I make this one a lot when lemons are in season here because I get lots of lemons from my friend who has a lemon tree in her backyard.
