2 T butter
1/3 cup chopped onion
1/3 cup chopped carrots
1/3 cup chopped celery
4 cups water
1/2 cup white wine or lemon
salt and pepper to taste
3 pounds salmon steak or any fish you wish

Directions:
Directions:
In large skillet, heat the butter and saute the veggies for 5 minutes. Add the water, wine, salt and pepper to the skillet. Let mixture simmer 5 additional minutes.

Gently place the salmon in boiling mixture. Lower heat, cover, and simmer gently for about 15 minutes. Remove salmon from the skillet carefully. Serve hot or cold.
