1/3 C. butter
1/4 C. flour
4 C. milk or soy milk
3 C. cheddar cheese, divided
4 C. shell pasta
1 (6 oz) can white albacore tuna, drained
1 (12 oz) bag frozen peas
8 Ritz crackers, crushed
Salt and pepper, to taste

Cook pasta according to pkg. directions. Rinse with cold water to stop cooking. Set aside. Melt butter over medium heat. Add flour and stir to form a paste. Gradually whisk in milk. Stir over heat until bubbly. Add 2 cups of cheese and frozen vegetables. Toss tuna with cheese mixture. Pour into greased casserole dish. Sprinkle with remaining cheese and top with crushed Ritz crackers. Bake at 375 for 30 minutes. Uncover and bake 5-7 minutes, or until topping is browned.
