4 T. butter
2 eggs
3 T. honey Dijon mustard
2 c. panko (Japanese breadcrumbs, in the Asian food aisle)
1 1/2 c. grated Parmesan cheese
1 tsp salt
1/2 tsp. pepper
4 boneless, skinless chicken breasts, butterflied

Directions:
Directions:
Preheat oven to 500 degrees. Line a large, rimmed baking sheet with foil and grease lightly. Melt 4 T. butter and set aside. Whisk mustard and eggs in a bowl. Mix panko, Parmesan cheese, salt and pepper. Dip chicken into egg mixture, then panko mixture, coating generously. Place on prepared baking sheet. Drizzle reserved melted butter over chicken. Bake chicken until browned and cooked through, turning once, about 10 minutes.
