4 boneless, skinless chicken breasts
1 1/2 c. seasoned bread crumbs
1/2 c. grated Parmesan cheese
1/2 c. flour, on a shallow plate
2 eggs, lightly beaten, in a shallow plate
3 T. olive oil
1 jar spaghetti sauce
2 c. shredded mozzarella cheese
Hot, cooked angel hair pasta

Directions:
Directions:
Pound chicken breasts between two pieces of plastic wrap to about 1/2 thickness. (If chicken breasts are thick, I usually just slice them in half lengthwise). Combine bread crumbs and 1/4 c. Parmesan cheese in a shallow plate or pie plate. Coat each breast in flour, then dip in egg, and then into the bread crumb mixture. Heat oil in a large skillet. Add chicken and cook on both sides until golden brown. Spread one cup of spaghetti sauce in the bottom of a baking dish and top with chicken breasts. Top with another cup of sauce and sprinkle with mozzarella and remaining Parmesan cheeses. Bake in a 375 degree oven for 20-25 minutes or until cheese is bubbly. Serve hot with angel hair pasta and spaghetti sauce.
