1 stick margarine
1 teaspoon vanilla
1/4 cup buttermilk(take regular milk, add a little vinegar till it curdles)
1 1/4 - 1 1/2 cup sugar
3 eggs
7 oz coconut
1 pie crust

Directions:

Melt margarine, add sugar milk and other ingredients
Mix well
Bake 40 -50 minutes as 325
