3 zucchini
2 tbsp. olive oil
grated lemon peel
1 tsp salt
1tsp pepper
Parmesan cheese

Directions:
Directions:
Cut zucchini into 4 quarters (length wise)

In nonstick skillet, cook in oil on medium heat for about 4 minutes

Add grated lemon peel, salt, and pepper. Stir mixture for about 5 minutes.

Remove from pan and sprinkle on desired amount of cheese.
