2 large leeks
2 T butter
2 cups chicken or vegetable stock
2-3 diced potatoes

Directions:
Directions:
Cut off the roots and dark green portion of the leeks, and discard. Slice the leeks in half lengthwise to wash all of the dirt out, and then chop them into 1 inch pieces.
Heat the butter and saute leeks.
Add potatoes, cover with stock. Cook for 20 minutes, until potatoes are done.
Serve as is, or run the soup through a food mill for a smoother consistency.

This recipe is really quick and easy. Potato Leek soup is a staple around our house all through autumn and winter for lunchtime. We serve it with crusty French garlic bread. Mmmn. Our girls eat it all up.
