2 lbs. Zucchini
1 Can Cream Corn
3 Beaten Eggs
6oz. Sharp Cheddar Cheese grated plus 1/2 cup
1 Medium Onion chopped
1 Tbsp. Butter
1/2 Cups Bread Crumbs

Directions:
Directions:
Preheat oven to 350. Wash zucchini and slice into a sauce pan. Add a little water and cook until tender. Do not over cook. Drain. Add butter, corn and well beaten eggs, salt, and pepper and grated cheese. Gently mix and place in a greased casserole pan top with bread crumbs and 1/2 cup cheese. Bake for 40 minutes.
