1 eggplant 1 egg 1/2 cup grated cheese parsley garlic salt onion salt 1 cup bread (chunked in pieces) 2 Tbs oil 1 can tomato sauce 1/2 cup water
Peel eggplant, dice in small chunks. Boil till tender. Squeeze out all water. Place in bowl, add spices to taste, bread chunks and cheese. Make patties. Brown in skillet. Pour tomato sauce over top. Add water. Cook 15-20 mins.
