4 eggs
2 cups sugar
1 1/2 cups oil
2 tsp baking soda
2 tsp cinnamon
1 tsp salt
2 cup flour
3 cups grated carrots
1/2 cup chopped walnuts

Icing
3/4 stick of margarine - room temperature
1 8oz cream cheese - softened
1 box powdered sugar - ( 1lb)
2 tsp vanilla
1/2 cup chopped walnuts

Directions:
Directions:
Heat oven to 350 . For cake: Beat eggs well. Add sugar and oil and beat until well blended. Put in rest of dry ingredients. Add carrots and nuts and mix well. Grease and flour either 2 8" or 2 9" pans. Spray them with Pam. Bake for 40 minutes or until toothpick comes out clean. Frost with Cream Cheese frosting.
For icing: Cream margarine with cream cheese. Add powdered sugar. Blend well and add vanilla. Frost cake and sprinkle walnuts on top of cake once frosted.
