1 1/2 cup flour
1 t cinnamon
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp nutmeg
1 cup sugar
1 cup finely shredded unpeeled zucchini
1/2 cup oil
1 egg
1/2 cup chopped walnuts

Directions:
Directions:
Heat oven to 350. In a mixing bowel combine flour, cinnamon, baking soda, salt, baking powder, and nutmeg. In another mixing bowl combine sugar, shredded zucchini, cooking oil and egg. Mix well. Add flour mixture; stir just until combined and stir in nuts. Pour batter into loaf pan and bake for 50 min or until toothpick is inserted middle and comes out clean. Cool for 10 minutes and then pop out of pan.
