1 small onion
1 t. oil
2 green peppers
1 large can diced tomatoes
2 lb. ground round or sirloin
1 t. dried basil
Salt and pepper to taste
Cayenne pepper (opt.)
3 c. cooked rice

Directions:
Directions:
Cook rice per directions in separate pan. Chop onions and saute' in oil. Add ground meat to onions, brown and drain fat. Cut green peppers into bite-size pieces. Season with salt, pepper and basil. Add to meat, stirring occasionally until peppers soften, then add tomatoes. Simmer on low heat 10 minutes, add cooked rice and heat through. Top with shredded colby jack cheese, if desired.
