1/3 c. butter
1/3 c. chopped onion
1/3 c. flour
1 3/4 c. chicken broth
2/3 c. milk
1/2 t. salt
1/4 t. pepper
2 1/2 c. cut up cooked chicken (I use rotisserie chicken from Costco)
1 pkg. (16 oz.) frozen mixed vegetables
Pastry for 2 9-inch pie crusts (I always use the Pillsbury pre-made pie crust in the red box in the refrigerator section of your grocery store)

In a large saucepan, melt butter. Saute onion in butter. Using a whisk, stir in flour until smooth. Stir in broth, milk, salt and pepper. Heat to boiling and stir until thickened and bubbly. Stir in vegetables and chicken. Place one pie crust in 9 or 10 inch pie plate. Put chicken mixture into pie crust. Place 2nd pie crust on top; crimp edges to seal and cut in several slits for steam to escape. Bake at 425 degrees for 35 to 45 minutes. Cover edges of pie crust with foil for last 15 minutes.

This is our family's all-time favorite meal! It's easy to prepare; it has everything all in one dish, and everyone loves it! Great with a good loaf of French bread! I often make a double recipe and freeze one for later.
