1 (14oz) can Mexican style tomatoes
4 cups cooked rice
3 tbsp sliced pickled jalapeños
6 oz lite sour cream
4 oz cheddar cheese (lite)
2 tbsp chopped fresh cilantro

Directions:
Directions:
Heat oven to 350º. Coat 2oz dish with cooking spray. In small bowl combine tomatoes and sour cream. Layer 1/2 the rice, then 1/2 tomatoes, then 1/2 cheese. Repeat layers. Bake 35-40 minutes until casserole is bubbly. Garnish with cilantro and pickled jalapeños.
