1 T Olive Oil
2 cloves Garlic, minced
1 med Onion, chopped
1/2 C Rice
3 C Chicken Broth or Veggie Broth
1 tsp Cumin
1 tsp Oregano
2 T Jalapeņo Juice, optional
1 canned Jalapeņo, finely chopped, optional
1 med Green Pepper, diced, optional

Directions:
Directions:
Saute in the olive oil the garlic, onion and green pepper until the onion is translucent. Toss in the rice and brown. Add the chicken broth, cumin and oregano. Simmer rapidly for 20 minutes or until the rice is nearly done. Add to taste the jalapeņo and its juice.
