Dressing:
1 C mayonnaise
1/3 can orange juice concentrate
C red or white wine vinegar
C sugar (or to taste)
1 - 2 Tbs poppy seeds

Mix together and set aside.

Salad:
Any combination of chopped greens (Darlene likes romaine, baby spinach and red leaf lettuce)
1 small red onion, thinly sliced
1 large can mandarin oranges, drained
1 jicama, peeled and chopped
1 C shredded mild white cheese

Directions:

Mix salad ingredients together and toss with dressing right before serving.
