Dressing:
C raspberry vinegar
1 C oil
1/3 C honey
2 tsp soy sauce
1 garlic clove, minced
inch fresh ginger root, minced

Blend together and shake well.

Salad:
1 lb chicken, skinned and deboned, cut into strips
1 Tbs oil
1 Tbs butter
1 lb mixed greens (mostly romaine)
red onion, sliced thinly
1 pt fresh strawberries, sliced
C walnuts, toasted

Directions:
Directions:
Brown chicken in oil and butter. After chicken is cooked through, deglaze pan with a few Tablespoons of dressing and toss with chicken. Arrange greens on four plates. Divide the chicken and berries among the plates. Add a few onion slices. Drizzle 4 Tbs of dressing over each salad and top with 1 Tbs of toasted walnuts.
