Pineapple Cake (Verna Rae)

2 eggs
2 C flour
1 C brown sugar
2 tsp soda
20 oz crushed pineapple (with juice)
1 C white sugar
1 C chopped walnuts

Beat eggs until light and fluffy. Mix by hand only. Add rest of ingredients. Put mix in ungreased 9 x 13 pan. Bake 40-45 minutes, 350 degree oven, and let cake cool in pan.

6 oz cream cheese
2 tsp vanilla
1 tsp ground ginger
C soft butter or margarine
4 C sifted powdered sugar

With mixer, beat cream cheese, butter and vanilla until smooth. Gradually add sifted powdered sugar, a little at a time, and ground ginger. Beat until smooth. Frost cake and sprinkle top with chopped walnuts.
