1 lb. (3 or 4 filets) of Orange Roughy 3 tbsp. lemon juice 1 tbsp. dijon mustard 1 tbsp. butter 1/4 tsp. pepper
Mix lemon juice, dijon mustard, butter and pepper and brush on fish. Broil for 8-10 minutes at least 5 inches from heat until fish is white and fluffy. Pour remaining mixture on fish and serve immediately.
