2 medium chicken breasts chopped.
2 cups sliced green onions
1 tablespoon olive oil
1 10 ounce package frozen spinach (thaw & drain)
1 cup low-fat ricotta cheese
1/3 cup grated Parmesan cheese
1/2 teaspoon crushed oregano
1/2 teaspoon ground nutmeg
1/4 teaspoon lemon juice
2 tablespoons melted margarine
8- 7 inch egg roll wrappers
marinara sauce (if desired)

Directions:

In a large skillet, cook chicken and onion in oil until tender. Combine drained spinach, Parmesan, ricotta, garlic, oregano, nutmeg and lemon juice in large mixing bowl. Mix well with fork and add chicken mixture. Season with salt and pepper and (Italian seasoning if desired). Lightly grease or spray 10 ounce custard cups and line with egg roll wrappers. Divide chicken mixture among them and fold edges tight (may need to wet the edges slightly to get them to stick in bundles). Brush with remaining butter and bake at 350 until golden (~25-30 minutes)

I frequently make this with more chicken than in original recipe and I just add a little more ricotta etc.
I usually put the marinara out like a sauce so each can top their serving as desired. *Note: i ALWAYS forget to buy the spinach on my 1st trip to the grocery! I have used cupcake pans on occasions where i double the recipe and don't have enough custard dishes.
