3 cups broken pecans
16 ounces soft cream cheese (i use neufchatel)
8 ounces drained, crushed pineapple
1/4 cup chopped red pepper
1 teaspoon seasoned salt
2 tablespoons green onion

Directions:
Directions:
Spread nuts in a shallow baking pan and bake at 350 for 7-10 minutes. Cool nuts. Coarsely chop 1 cup of nuts and grind the remaining 2 cups.
Combine fine nuts with cream cheese, pineapple, red pepper, onion and seasoned salt and beat until well blended. Roll ball/logs in coarsely chopped nuts and cover/chill until serving time.

I used to purchase holiday mugs at the dollar store and fill them with this mixture, put the nuts on the top and give them for gifts/hostess presents. You may freeze them and thaw for 24 hours in the refrigerators before serving.
