4-6 medium potatoes
1 teaspoon salt
3 tablespoons softened butter
1/3 cup warm milk
1/2 cup sour cream
1 tablespoon mustard (i like grey poupon)
1 tablespoon sugar
4 tablespoons chopped green onions

Directions:
Directions:
Preheat oven to 350.
Wash, pare and cut potatoes into 4 pieces each. Cover with boiling water, add salt, and cook (covered) from 20-40 minutes until tender. Drain. Add softened butter and warm milk. Mash until free of lumps. Heat the sour cream over low heat. Add mustard and sugar to the sour cream and mix until well blended. Stir mixture into potatoes. Blend in chopped onion. Put the mixture into a 1 quart casserole dish and bake for 15 minutes.
