1/2 c. grated Parmesan cheese
1/2 c. crushed corn flakes
1/4 t. cayenne pepper
1/4 t. salt
6 fine textured fish fillets (flounder, cod, tilapia, sole)
1 egg, lightly beaten

Directions:
Directions:
Mix cheese, corn flakes, pepper, and salt in a shallow dish. Dip fish in egg; coat with cheese/cornflake mixture. Place in shallow baking dish or cookie sheet (line with foil for easy clean-up). Bake at 450 degrees for 5-10 minutes or until fish flakes easily with a fork.
