2 T. oyster sauce
1 T. soy sauce
1 T. brown sugar
2 t. corn starch
1/3 c. water
12 oz. chicken breast pieces
2 T. cooking oil
1 med. onion, sliced
2-3 red or green bell peppers
1 clove garlic, minced
1/2 c. cashews
Hot, cooked rice

In a small bowl, combine oyster sauce, soy sauce, brown sugar, and corn starch. Stir in water and set aside. In a large skillet or wok heat oil over med/high heat. Add onion and stir-fry 1 min. Add peppers and garlic and stir-fry 2 min. Remove with slotted spoon and set aside. Add chicken to wok and cook 4-5 minutes. Add sauce to wok and cook and stir until thickened and bubbly. Return onion, peppers, and garlic to wok. Cook 1 minute more. Stir in cashews. Serve over rice.
