1 lg Onion, chopped
2 cloves Garlic, pressed
1 T Olive Oil
10 oz pkg Frozen Spinach, thawed
16 oz can Tomatoes, diced
1 sm jar Salsa
1 pkg Taco Seasoning
1 T Cumin
1 lg Jalapeño, diced
14 oz Tofu, cut into small pieces
1 C Sour Cream or Yogurt
15 Corn Tortillas
1 1/2 C Cheese, shredded

Directions:
Directions:
Saute onion and garlic in the olive oil. Stir in spinach, tomatoes, salsa, taco seasoning, cumin, and jalapeños and simmer 10 minutes. Add tofu and sour cream and mix well. Layer tortillas, then mixture, then cheese in baking dish ending with cheese. Bake at 350º for 40 minutes.

This takes a bit to put together, but it is totally worth the effort. It makes my mouth water just thinking about it. You can replace the tofu with chicken and get a great meal as well.
