Ingredients:  
1 can black beans, drained and rinsed
1 can corn, drained
2 bunches green onions, chopped
2 large tomatoes, chopped
2 avocados, chopped
1 can “Rotel” tomatoes
Juice from 1 lime
1/4 c. cilantro
1 orange pepper, chopped

Dressing:
1/2 c. olive oil
1/4 c. red wine vinegar
1/2 tsp. salt
Tabasco to taste

Mix dressing ingredients. Pour over beans, corn, Rotel, cilantro, pepper, and green onions. Marinate 4-5 hours. Add avocado and fresh tomato before serving. Serve with tortilla chips.
