1 lb boneless pork loin Taco seasoning 1-8 oz jar of mild salsa 4 T peach preserves 1 T vegetable oil
Heat oil over med. heat. Cut pork into cubed bite size pieces. Coat in taco seasoning and brown in oil. Add in salsa and peach preserves. Simmer gently for 15 - 20 mins. Serve over cooked rice. Serves: 4
