1 lb boneless pork loin
Taco seasoning
1-8 oz jar of mild salsa
4 T peach preserves
1 T vegetable oil

Directions:
Directions:
Heat oil over med. heat.
Cut pork into cubed bite size pieces. Coat in taco seasoning and brown in oil. Add in salsa and peach preserves. Simmer gently for 15 - 20 mins.
Serve over cooked rice.
