4 sweet potatoes, cut into 1 inch cubes
extra-virgin olive oil
salt
butter
cinnamon
honey

Directions:
Directions:
Preheat oven to 375F. Lay potato cubes in a single layer on a cookie sheet or roasting pan. Drizzle with olive oil and sprinkle lightly with salt. Make sure all potatoes are covered. Roast 25-30 min. or until they are tender. Transfer to a serving bowl and melt a little butter on top. Drizzle with honey and sprinkle with cinnamon. I don't know how much- until they taste right!
