1 large cucumber cut in 1/4" thick round slices (About 2 cups) 1 medium size onion, sliced into thin rounds 1/2 c. sugar 1/2 c. distilled white vinegar 1 tsp. salt 1/2 tsp. mustard seeds 1/4 tsp. celery seed 1/4 tsp. turmeric
Mix all ingredients in a 1 QT micro-safe bowl. Microwave on HI for 7-8 minutes, stirring twice until the cucumber is crisp-tender & onions are translucent. Ladle into a glass jar. Cover, cool slightly and refrigerate. Makes 2 1/2 cups.
