Casserole:
1&1/2 C celery- chopped
4 eggs- hard boiled and halved
2 C cooked meat- cut up (I use ham or chicken)
1/4 C butter
1/4 C flour
salt and pepper to taste
2 C milk
1 small onion- thinly sliced
1/4 C green pepper- chopped
Cheese Crescents:
2 C flour
3 tsp baking powder
1 tsp salt
1 C shredded cheese (use your favorite)
1/3 C oil
2/3 C milk

Preheat oven to 425
1. Arrange celery, eggs, and meat in ungreased 8x8 baking dish.
2. Melt butter, add flour, salt, and pepper to make a paste. Cook over low heat, stirring until smooth and bubbly.
3. Add milk to flour mix and heat to boiling, stirring constantly. Boil 1 minute. Add onion and green pepper and pour over meat. Bake for 25-30 min. Prepare cheese crescents (see below) and place 6 on top of casserole. Bake the remaining crescents on a cookie sheet 12-15 min.
Cheese Crescents:
Mix together all dry ingredients. Combine oil and milk and add all at once to flour mix. Stir until dough forms a ball. Knead about 10 times. Roll into a circle, 1/2 inch thick between two sheets of waxed paper. Cut into 12 wedges. Roll and shape into crescents.

Other vegetables can be substituted or added. I've used carrots and summer squash and both turned out well.
