1 package active dry yeast
2 tbsp. warm water
4 C. sifted all-purpose flour
1/4 C. sugar
1 tsp. salt
1 tsp. grated lemon rind
3/4 C. butter
3 egg yolks
1 C. heavy cream
(prune filling, apricot filling, frosting)

Directions:
Directions:
Soften yeast in the water. Use very warm water for dry yeast. Sift flour, sugar, and salt. Add lemon rind and yeast and blend in butter. Beat egg yolks and add the cream. Add to the first mixture and blend well.
Cover and refrigerate overnight. Next day, toss on lightly floured board and roll to 1/4 inch thickness.
Cut with a 2"-inch cutter and put on ungreased cookie sheet.
Cover and let rise until double in bulk, about 1 hour.
Make a depression in the center of each and put in one of fruit fillings.
Bake in preheated oven at 375 for about 10 minutes.
Spread with frosting while warm.

Apricot Filling: Cook and drain 1 1/2 C. dried apricot halves. Force through sieve and add 1/2 C. sugar. Makes enough to fill 4 doz.
Prune Filling: Cook and drain 1 1/2 C.dried prunes. Pit and mash with fork. Add 1/4 C. sugar and 1/2 tsp. cinnamon.
Frosting: Mix well 1 1/2 C. powdered sugar, 1 tsp. lemon juice, and 2 Tbsp. boiling water.
