4-6 fresh tomatoes diced clean out pulp and seeds and use meat
2 cloves garlic, chopped
2 whole garlic cloves peeled
3 TBSP. extra virgin olive oil
2 tsp. balsamic vinegar
2 TBSP. chopped, fresh basil
tsp. salt
tsp. pepper
8-12 slices Italian or French bread

Directions:
Directions:
Place tomatoes, chopped garlic everything but whole garlic cloves in bowl and mix up. Let stand 20 min. at room temperature or refrigerate up to 3 hours.
Toast bread on one or both sides when cool enough to handle rub with whole garlic cloves (if you wish).
* Spoon tomato mixture on top.
