1 Medium Potato
2 Cups Potato Water
1 Package of Red Star Yeast
8 to 10 Cups Flour
2 Cups Water
1 Tbsp Sugar
1 Tbsp Salt
4 Tbsp Melted Crisco

Directions:
Directions:
Cook potato until tender. Mash potato and add enough potato water and tap water to make 2 cups of warm water. Add yeast to warm mixture. Add enough flour to make pancake like batter. Let set overnight.
Add 8 - 10 Cups of Flour to sponge and 2 more cups warm water, sugar, salt and crisco. Mix well and work dough until smooth. Bake for 20 minutes in a 425 oven.
To make, let rise twice, working down first time. Put in greased loaf pans or muffin tins for rolls. Let rise to double size and bake at 375 for 30 minutes.
