Ingredients:  
Filling: 9 eggs. 3 lbs. of drained whole milk ricotta. 1/2lb. of genoa salami(diced), one small mozzarella(shredded). a pinch of black pepper. 1/4 c. grated Parmesan cheese. Mix all together with a wooden spoon.
Pie crust: one box pie crust mix(break up lumps). Add one egg and 1 tbl. warm water and a dash of black pepper. Mix with a fork. Form a ball and wrap in saran wrap and put in refrigerator for 30 minutes. Roll out and form a crust in pie pan.

Preheat oven to 350º.
Mix filling into pie crust and cover with strips of pie crust dough. Making a lattice top. Brush top of crust with a beaten egg. Bake for one hour if pie still seems loose when shaken cook a little longer.
