2 egg whites
1/8 tsp salt (scant)
1/8 cream of tarter (scant)
1/4 c sugar

Directions:
Directions:
To make meringue:
Beat egg whites, salt, and cream of tartar until foamy. Add sugar, 2 tablespoons at a time. Beat until very stiff peaks form. Add vanilla.
To make the cookies:
Bake at 200-250 degrees for 1-2 hours until completely dry to the touch. Cool in oven with the door barely cracked.

Leave in oven for several hours to dry, or overnight. The cookies must dry completely or else they will be too sticky in the middle. This great for making strawberry shortcake torts or for dipping in chocolate. These cookies are very low in fat and melt in your mouth.
