1 chopped onion
1/2 chopped green pepper
1/2 lb. butter
1 C. undrained whole kernel corn
1 C. undrained cream style corn
1 pkg. corn muffin mix (Jiffy)
3 eggs beaten
1/2 C. pimento, chopped
1/2 pt. sour cream
1 c. grated cheddar cheese

Directions:
Directions:
Saute onion and green pepper in butter until onions are transparent. Cool. Beat eggs and add the two corns and muffin mix. Stir in the onion mixture. Add pimentos, sour cream and cheese. Bake at 325 for 1 hour. you may use a glass casserole dish, but it seems to bake better and more evenly in a 9x13 inch pan.
