Ingredients:  
1 cup corn meal, 1/2 cup flour, 1/2 tsp. baking soda, 1 tsp. salt, 1/2 tsp. sugar, 1 cup canned creamed corn, 1 onion chopped fine, jalapeno chilies to taste (I use 2) chopped fine, 1/4 lb. shredded cheddar cheese, 1/2 cup veg. oil, 2 eggs, 1 cup buttermilk.

Blend all ingredients together and bake in muffin cups for 25-30 minutes at 450.
