2 cups grated zucchini
3 cups flour
3 eggs
1 tsp cinnamon
1 cup oil
1 tsp nutmeg
2 1/2 cups sugar
1 tsp vanilla
1 tsp salt
1 -3oz. pkg. vanilla pudding
1 tsp baking soda
1 cup nuts or raisins (opt)
1/4 tsp baking powder

Directions:
Directions:
Combine all ingredients well. Bake in 2 large loaf pans, greased and floured, at 350 degrees for 55-60 min.
Or for 5 small loaves bake for 40-45 min.
