4 cups broccoli slaw
2 large red peppers, thinly sliced (about 2 cups)
4 carrots, shredded (about 2 cups; I usually just buy the already-julienned carrots at the store)
1/2 c. green onions (white & green parts)
1 can (8 oz.) pineapple tidbits, drained
3 chicken breasts, cooked, deboned, shredded
1/2 cup creamy poppyseed dressing
1/4 cup cashews

Directions:
Directions:
Combine all ingredients except dressing and cashews in a large bowl. Add dressing; toss to coat. Sprinkle with cashews just before serving.

Good for a hot summer night. You can get creative & subtract or add whatever you want. Sometimes I add craisins, mandarin oranges and blue cheese...yum.
