1 # round steak (you could use chicken breast)
1/4 c Soy Sauce
1 T. Water
1 tsp Sherry
1 1/2 t. cornstarch
2 cloves garlic chopped
2 T oil
1/4 tsp Pepper
2 Large Green Peppers Coarsely Diced
1/2 large onion chopped
2 large tomatoes Cut into wedges
Cooked Rice

Directions:
Directions:
Combine soy sauce, water & sherry w/ cornstarch in bowl. Cut steak (or chicken) into thin slices, add to cornstarch mixture sprinkle w/ garlic. Set aside.
In a frying pan (or wok) heat oil. Add peppers & onions cook slowly until peppers are almost tender. Add beef w/o the soy sauce mixture, & pepper. Stir-fry beef until browned. Carefully add soy sauce mixture, this will thicken quickly so continue mixing - add additional water to mixture to thin it out if needed.
Cover & cook for 15 minutes until beef is tender. Add tomatoes, cover & cook for additional 5-10 minutes until tomatoes are tender. Serve over Rice

This is one of those meals that can be quick to prepare - you can do all the preparation the night before & just stir-fry it while the rice is cooking.
