2 green peppers, diced
1 onion, diced
1 can cream of mushroom soup
1 8-oz. bag grated cheddar cheese
1 pint homemade hominy
8 to 10 eggs, beaten, in separate bowl
Bacon, cooked and crumbled

Directions:
Directions:
Stir all ingredients, except eggs and bacon, together and add to greased casserole dish. Bake 350 for 50 minutes. After 50 minutes, add eggs with crumbled bacon to top of casserole and cook two more minutes (no longer) and let stand for five minutes before serving.
