Cream Puffs:
1/2 cup water
1/4 cup butter
1/2 cup flour
2 eggs

Custard Filling:
1 cup milk, scalded
3 tablespoons flour
1/2 teaspoon vanilla
1/4 cup sugar
grain of salt
2 egg yolks or 1 whole egg

Chocolate Frosting:
1/2 cup sugar
1/ 1/2 tablespoons cornstarch
1 ounce unsweetened chocolate
1/2 cup boiling water
1 1/2 tablespoons butter
1/2 teaspoon vanilla
dash salt

Directions:

Cream Puffs:
Heat butter and water to boiling in a sauce pan. Stir in flour. Stir constantly until mixture leaves the sides of the pan and forms a ball (about 1 minute). When cool, beat in 2 eggs, one at a time. Beat until mixture is velvety and smooth. Drop into 4 piles from spoon onto ungreased baking sheet. Bake at 400 until dry and golden brown, about 45-50 minutes.

Custard filling:
Mix four, sugar and salt in mixing bowl. Stir in scalded milk to make a thin paste. Cook in top of double boiler until thick. Cover and cook for 15 minutes. Slowly add a little of the hot mixture to beaten eggs, stirring constantly. Stir egg mixture into milk mixture in double boiler. Cook 1 minute more. Cool. Blend in vanilla. Fill puff shells.

Chocolate Frosting:
Mix sugar and cornstarch, add chocolate, salt and water. Cook until thick. Add butter and vanilla. Spread while hot on cream puffs
