2 cup chopped chicken, cooked
2 cup rice (cooked in chicken stock)
1 can cream of chicken soup (plus 1/2 can water)
1 cup mayonnaise
2 tbsp chopped onion
1 (8oz.) can water chestnuts, chopped or slices
2 tbsp lemon juice
1 cup diced celery
1/2 tsp salt
dash of pepper
1 c Ritz crackers (crushed)

Directions:
Directions:
Mix together everything except the Ritz crackers and put into a baking dish. Sprinkle with crushed Ritz crackers. Bake at 375 until bubbly---about 30 minutes.
