20 Cups Popped Popcorn
2 Cups Firmly Packed Brown Sugar
1 Cup Butter
1/2 Cup Light Corn Syrup
1/2 Tsp. Salt
1/2 Tsp. Baking Soda
1 Cup Salted Nuts (Optional)
1 Very Large Bowl or Pan to hold Popcorn while you make syrup.

In a large roasting pan lace the popped popcorn. Set aside. In a 2 quart sauce pan combine brown sugar, butter, corn syrup, and salt. Cook over medium heat, stirring occasionally, until mixture comes to a full boil, continue cooking until candy thermometer reaches 238. Remove from heat. Stir in baking soda. Pour syrup over popcorn, stir until all popcorn is coated. Add salted nuts at this time and continue stirring. Bake for 20 mins. in a preheated oven to 200. Stir popcorn mixture and return to oven to bake for another 25 mins. Remove from oven and immediately place caramel corn on wax paper to cool. When corn is cool break into pieces. Store in a tightly covered container.
