1 small roaster chicken, cut up
7 lg. spoons flour
7 lg. spoons fat
1 lg. onion
2 qt. warm water
salt and pepper, black and red to taste
file powder
1 pt. oysters
garlic to taste

Directions:
Directions:
Salt and pepper chicken. Make roux with flour and fat. Add garlic, onions and chicken to brown. Add warm water and simmer until tender. Add oysters 10 min. before serving; also file.
