ripe tomatoes (about one peck), skin removed
2 quarts of onions, chopped
10 green peppers, cored and chopped
1 pint cider vinegar
1 teaspoon cinnamon
1 teaspoon cloves
1 teaspoon allspice
1/2 sweet red pepper, chopped
2 teaspoon salt
2 pounds light brown sugar

Directions:
Directions:
Combine all ingredients into a stock pot and let cook until thick. Be careful not to have heat too high (keep at simmer) and stir frequently. This takes many hours of simmering before ready for canning.

Ladle hot mixture into hot, sterilized small canning jars working with one jar at a time. Place hot, sterilized vacuum seal type lid on top and screw on tightly. Make sure the vacuum seal is activated.
