8 large eggs, separated
1 cup sugar
3/4 cup lemon juice
1 lemon rind, grated
1 1/2 tbsp gelatin
1/4 cup hot water
1/2 cup sugar
lady fingers

Directions:
Directions:
Beat egg yolks and add 1 cup sugar gradually. Add lemon juice. Cook on top of double boiler (water hot but not boiling). Cook until mixture is thick. Add grated rind of lemon, gelatin that has been dissolved in 1/4 cup hot water. Cool custard before adding stiffly beaten egg whites and 1/2 cup sugar. Pour into springform pan lined with lady fingers.
