Crust:
3/4 cup graham cracker crumbs
2 tbsp of melted butter
2 tbsp sugar
Filling:
1 large package of cream cheese
1/4 cup sugar
1 tsp vanilla
1 egg

Directions:
Directions:
Mix softened cream cheese with sugar using a fork. Add vanilla and a slightly beaten egg. Mix until smooth.
Mix crumbs, butter and sugar. Use mini-muffin pan with small muffin liners. Put 1 tbsp of graham cracker mix into each muffin liner. Then add 1 tbsp of cheesecake filling. Bake for 10 minutes at 375F. Cool and add a topping such as cherry pie filling.
