2 Pork Tenderloins
3 T. Dijon mustard
1 cup (approx) bread crumbs
4 T. butter
2 c. heavy cream
additional 2 T. dijon mustard

Directions:
Directions:
Cut pork tenderloins into 1 inch slices and pound between pieces of waxed paper until they are thin. Season with salt and pepper. Brush tops with dijon mustard Coat with bread crumbs and refrigerate for 1/2 hour. Saute in melted butter until almost done. Put into 400 oven for 5 minutes while you make the sauce by whisking 2 cups of heavy cream and 2 T. dijon mustard in the pan. Reduce the sauce for about 3 minutes and season to taste. Put some sauce on the plate and place the tenderloins in the sauce to serve. It is good with rice and a green salad.
